In a soup pot on medium heat, brown ground sausage, chopped onions, and garlic.
Once cooked, add chicken broth and heavy whipping cream and bring to a simmer.
While still on medium heat, add cauliflower and bacon. Cook for 10-15 minutes or until cauliflower can be pierced with a fork.
Finally, Add spinach and let it cook in soup for 5 or so minutes until wilted into soup. Finish seasoning to taste.
Allow to cool and top with Parmesan Cheese.
Notes
This recipe is so versatile. I like to add spinach, however, you can substitute kale instead of spinach.Add some spice to this recipe by choosing a spicy sausage versus regular ground sausage.Toscana soup is perfect for meal prep. Make in a big batch and freeze some for later.Enjoy!
